Light Mediterranean Meals Paired with Ample Dessert

Dolce: Chocolate Pudding with Toasted Almonds

IMG_3561Well, now I’m giving away all of my secrets. This is one of the easiest and most decadent desserts on my “go-to” list. It’s a creamy chocolate pudding with a surprising ingredient, tofu! Before you judge, make it. I guarantee that you’ll love it. I like to flavor it with vanilla and cinnamon. I’ve tried it with a bit of cayenne pepper as well, for a spicy twist. ––jacque

Ingredients

1 16-ounce package of silken tofu

1 1/2 cups chocolate chips (I prefer the dairy-free chocolate chips by 365 brand)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 cup almond slivers, optional

Directions

1. Melt the chocolate chips on a stovetop. I create a double-boiler with a medium-sized pot with a little water on the bottom and a smaller saucepan with the chocolate chips inside. This prevents the heat from directly touching the chocolate which can cause it to burn.

2. Once chocolate is melted, add silken tofu and vanilla and stir.

3. Use a blender to thoroughly mix the ingredients. I use a medium speed for a creamy texture.

4. Pour the chocolate mixture into a bowl and refrigerate for at least an hour to allow it to set.

5. In the meantime, lightly toast the almond slivers. I do this in my toaster oven but you could also toast in a pan on your stovetop.

6. Allow the almonds to cool to room temperature and use them as a topping when you’re ready to serve the pudding.

Extra Tip

You can freeze this pudding as well if you prefer a colder, ice cream-like treat. You’ll end up with a gelato-ish consistency.
