Light Mediterranean Meals Paired with Ample Dessert

Mezze: Roasted Aleppo Carrots

Transform every day carrots into something special with this easy recipe. I always buy too many carrots and sometimes struggle with ways to make use of them before they spoil. I recently invented this simple roasting recipe using a few flavors that I love. What makes them so special is the Aleppo chili powder, a beautiful, rich burgundy-colored pepper from Syria and Turkey. If you don’t have a local Middle Eastern market, I suggest picking some up from the interwebs. Now carrots are never left over in my house! —jacque

Ingredients

1 pound carrots, peeled and chopped into 3-inch sticks

1/2 cup olive oil

1 tablespoon garlic salt

2 tablespoons Aleppo chili powder

Optional: 1/2 cup fresh dates, chopped

Directions

1. Preheat oven at 425 degrees.

2. Peel carrots. Cut in half length-wise and then into 3-inch sticks.

3. Place carrots in roasting pan or on baking sheet in a single layer.

4. Drizzle with olive oil.

5. Add Aleppo chili powder and garlic salt to taste and toss.

6. Add a handful of chopped dates if you’re into adding some sweetness.

7. Roast in oven @ 425 degrees for 10 minutes.

8. Toss and roast for an additional 10 minutes or until carrots are browning on all sides.

Pairing suggestions

1. Serve hot with rice, quinoa, or another grain.

2. Serve cold over a bed of mixed greens.

3. Serve with your favorite fall meal.
