Light Mediterranean Meals Paired with Ample Dessert

Mezze: Apricot Mint Couscous Salad

This salad has been in my recipe cue for months, and I’ve been waiting for the right person to share it with.  I was initially drawn to this recipe from Happyolks because of its gorgeous combination of colors, not to mention its equally attractive mise en place (cooking can be beautiful, too!).  I made it for lunch with my mom using our garden’s herbs, dried apricots (fresh  just went out of season), and the tri-color Israeli cous cous sitting in the cabinet.  This recipe is simple but flavorful – just make sure to taste and adjust towards the end for more herbs, lemon, or salt & pepper.  It can make or break the recipe for you!   –jaime

Ingredients
serves 4-6 as a salad or part of a mezze platter

1 3/4 cup Israeli cous cous

15 dried apricot halves

1/4 cup minced shallot

1/4 cup finely sliced green onion

1 large handful italian parsley, chopped

20+ mint leaves, julienned

1/4 teaspoon minced fresh jalepeno

Juice of 1 lemon

1/4 cup olive oil

salt and pepper

Directions

1. Cook Israeli cous cous according to package. Cut dried apricots in half and stir into the couscous for the last 3-4 minutes of cooking.  Strain, rinse with cold water, and let sit to dry while preparing the rest.  

2. In a large bowl, combine minced shallot, green onion, parsley, mint, and jalapeno (make sure to remove seeds before chopping).

3. Mix in the couscous to coat.  Add lemon juice, olive oil, salt, and pepper.  Taste and adjust seasoning.  The salad may need more herbs, spice, or seasoning depending on your taste.
