Light Mediterranean Meals Paired with Ample Dessert

Dolce: Chocolate Chip Pistachio Cookies

This is my go-to chocolate chip cookies recipe, when I’m not baking vegan, with a little added panache. I usually add walnuts or pecans to my chocolate chip cookies. This time, I used pistachios instead. The good news is these cookies are delicious – a perfect blend of salty and sweet. Enjoy! –jacque

Ingredients

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1 cup butter (2 sticks)

1/2 cup granulated sugar

1 cup light brown sugar

1 teaspoon salt

2 teaspoons vanilla extract

2 eggs

2 cups chocolate chips (I use semisweet/dark)

1 cup pistachios, shelled

Directions

1. Preheat oven @ 350 degrees

2. Mix together dry ingredients (flour, baking soda, salt)

3. Cream together butter and sugars using an electric mixer

4. Add vanilla and eggs to butter/sugar mixture

5. Mix wet and dry ingredients together

6. Fold chocolate chips and pistachios into the batter

7. Roll dough into tablespoon-sized circular shapes and arrange on baking sheet, spacing cookies at least 2 inches apart

8. Bake for 10-12 minutes until the edges are golden

9. Transfer cookies to wire rack or parchment paper to cool

These cookies are ready for their close-up!
