Light Mediterranean Meals Paired with Ample Dessert

Dolce: Basil-Lemon Cake

Despite my love of dolce, I’m not always confident in my baking abilities (anyone else relate?). So, I tend to choose flavorful and simple recipes like this one for Basil-Lemon Cake. The recipe is from Jesse Ziff Cool’s beautiful and flawless cookbook Simply Organic, a collection of culinary masterpieces for the everyday cook. The basil adds its own unique, herbaceous taste, but it also elevates the lemon, resulting in a bright and scrumptious little cake. Top it with any combination of whipped cream, ice cream, or berries, and you’re bound to be satisfied. –jaime

Serves 12

Ingredients

2 ½ cups unbleached all-purpose flour

2½ teaspoons baking powder

1/2 teaspoon salt

1/2 cup (1 stick) unsalted butter, softened

1½ cups sugar

2 large eggs

1/2 cup chopped fresh basil

2 tablespoons finely grated lemon zest

1 teaspoon vanilla extract

1 cup plus 2 tablespoons buttermilk

1 1/2 cups mixed berries, such as raspberries and blackberries

Ingredients Note:

The recipe above is Ziff Cool’s “alternate” for those of us without coconut flour readily available. The original recipe can be found here, along with an NPR interview with the Chef.

Directions

1. Preheat oven to 375°F. Lightly oil a pan. The recipe calls for a 9-inch springform pan, but I used a rectangular pyrex and it worked great.

2. In a medium bowl, combine flour, baking powder, and salt.

3. Combine the butter and sugar in a large bowl. Beat with an electric mixer on medium speed until creamy. Add eggs, basil, lemon zest, and vanilla extract. Beat until blended.

4. Add the flour mixture, a third at a time, alternating with the buttermilk and beating on low speed until smooth.

5. Pour into the oiled pan. Bake for 35 to 45 minutes, or until a wooden pick inserted in the center comes out clean. Let cake cool before taking it out of the pan.

Ziff Cool says the cake tastes better the next day – just make sure to cover it, and don’t put it in the fridge.
