Light Mediterranean Meals Paired with Ample Dessert

Mezze: Carrot Soup with Toasted Pistachios

I’m loving carrots right now. Perhaps it’s something about this time of the year, or perhaps it’s a rediscovery of a familiar ingredient. Either way, I’m excited to find new ways to cook with carrots. In this easy-to-prepare soup, carrot is definitely the star. —jacque

Ingredients

2 tablespoons olive oil

4 cups carrots, shredded

2 leeks, cleaned and chopped

2 cups vegetable broth

2 cloves garlic, minced

2 teaspoons cayenne pepper

salt and pepper, to taste

1 cup pistachios, optional

Directions

1. Heat olive oil in a large stockpot

2. Add carrots and leeks and saute until leeks are translucent

3. Add vegetable broth, minced garlic and cayenne pepper

4. Bring to a simmer for 7-10 minutes, mixing occasionally

5. Blend mixture using immersion or regular blender

6. Add salt and pepper to taste

7. Garnish with a handful of toasted pistachios when ready to serve
