Light Mediterranean Meals Paired with Ample Dessert

Mezze: Tabbouleh

Tabbouleh is a special herb salad, originally from the mountains of Syria and Lebanon. Tabbouleh is all about fresh parsley and mint. This is a traditional recipe which blends these herbs with fine bulgur, tomatoes, onion, and garlic. There are many variations of this dish incorporated into mezze around the world. Tabbouleh is also now very popular here in the US. I served this tabbouleh in a beautiful dish my co-workers brought me back from Turkey {isn’t it gorgeous?}. You can serve your tabbouleh the traditional way on leaves of lettuce. –jacque

Ingredients

1 cup fine-grind bulgur {#1}

1/2 cup olive oil

1/3 cup freshly squeezed lemon juice

2 cups fresh parsley, chopped

1 cup fresh mint, chopped

1 cup green onions, chopped

1 medium-sized white onion, chopped

2 cloves garlic, chopped

1 cup cherry tomatoes, quartered

Salt and pepper, to taste

Directions

1. In a medium-sized mixing bowl, soak the bulgur in hot water. Use enough water to cover all of the bulgur and let stand until tender {15-20 minutes}.

2. Drain excess water from the bulgur.

3. Toss bulgur with olive oil and lemon juice.

4. Season with salt and pepper.

5. Just before serving, chop the parsley, mint, onions, garlic, and tomatoes {be careful not to cut a finger, especially when chopping the herbs!}

6. Toss all ingredients together. Add more olive oil, lemon juice, salt, and/or pepper to adjust seasoning as needed.
