Dolce: Pumpkin Cardamom Cupcake

I was invited to a pumpkin-themed dinner party this weekend and decided to dust off the ol’ cupcake tins in anticipation. I went through a phase of baking a lot of cupcakes a few years ago. While I have slowed down the pace in pursuit of other dolce delights, they still have a special spot in my repertoire. I love this pumpkin cupcake recipe from When Vegan Cupcakes Take Over the World.  This is my adaptation of the recipe. I upped the spice levels with the addition of cardamom in both the batter and the frosting. Cardamom is a truly special spice with a unique aromatic flavor and tastes great with pumpkin. It’s from the same plant family as ginger and is one of the most sought after spices in the world, just behind saffron and vanilla. –jacque

Ingredients

–Cupcakes–

1 cup canned pumpkin

1/3 cup oil

1 cup sugar

1/4 cup soy milk

1 teaspoon vanilla extract

1 1/4 cups flour

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1 teaspoon ground cardamom

1/4 teaspoon salt

–Frosting–

1/4 cup margarine {I use earth balance}

1/4 cup vegan cream cheese

2 cups confectioners’ sugar

1 teaspoon vanilla extract

2 teaspoons ground cardamom

1 teaspoon ground ginger

Directions

–Cupcakes–
1. Preheat oven at 350 degrees.

2. Line muffin tin with cupcake liners.

3. In a medium-sized mixing bowl, mix together pumpkin, oil, soy milk, and vanilla.

4. Fold in flour, baking powder, baking soda, cinnamon, cardamom, and salt using a fork {put your hand-held mixer away for this batch}.

5. Use an ice cream scooper to fill each cupcake liner with batter, two-thirds full.

6. Bake for 20-24 minutes until golden brown on top and baked all the way through.

7. Fully cool and then frost.

–Frosting–
1. Cream together margarine and cream cheese using a hand-held mixer.

2. Whip confectioners’ sugar into the mix until smooth and creamy.

3. Add in vanilla and spices and blend.

4. Use immediately to frost cupcakes or store in refrigerator until ready.
