Mezze: Roasted Leeks with Egyptian Spices

When Jacque and I first heard of the spice blend “dukkah,” we giggled. It’s true – sometimes we revert back to our 4th grade humor. But this Egyptian spice blend has since become a staple of my pantry. While it varies depending on its maker, a typical dukkah includes cumin, coriander, sesame seeds, salt, pepper and nuts. You can buy it in a Middle Eastern market, make your own blend with this basic recipe, or simply combine a few of dukkah’s traditional components on the fly. I added the dukkah to a simple recipe for roasted leeks to give the veggies a more earthy, Mediterranean taste. The leeks can be used in soups, in a wrap, or the way I tried it – on top of a deep fried potato pancake. Yum. –jaime

Ingredients

5 leeks

1/3 cup olive oil

1 teaspoon salt

1/2 teaspoon freshly ground pepper

3 tablespoons dukkah or more to taste

Directions

1. Preheat oven to 350 degrees.

2. Cut leeks in half lengthwise, then slice horizontally into 1/4 inch half moons. Set leeks in a bowl of cold water and rinse until all dirt seems to be removed. Drain the water.

3. Put leeks in a 9×13 baking dish and toss with oil, salt, and pepper.

4. Roast leeks for 1-1 2/2 hours, depending on how browned you like them. Stir every 15 minutes to ensure that leeks don’t burn or stick to the pan.

5. When done, remove from pan, stir in 2 1/2 tablespoons dukkah.

6. Place leeks in serving dish and sprinkle remaining dukkah on top.
