Mezze: Potato Pear Soup

Hello 2013! Can you even believe that it’s a new year already? 2012 certainly feels like the shortest year on record yet. Or at least one for the record books as it was so full of exciting things, including the launch of Mezze & Dolce.

As we start a new year, I am once again revisiting my goals and dreaming up new ones. Something that I’d like to focus on in 2013 is building more community and one of the ways I plan to do this is through soup. I am going to start hosting an open house once a month – a very informal, come-as-you-are and bring a mug kind of affair. I’ll make a big ‘ol pot of soup and see what happens. My hope is that these soup nights will provide more time with friends and bring new people together.

For the first soup night later this month, I might just make this delicious Potato Pear Soup again. It was such a fun combination of flavors – sweet and tangy and comforting {that’s a taste, I promise}.

Ingredients

2 tablespoons margarine

2 leeks, cleaned and sliced thinly

4 cups vegetable broth

2 pounds russet potatoes, peeled and cubed

2 pounds bartlett pears, cored and cubed

1/4 cup light brown sugar, packed

2 teaspoons salt

–Optional garnish–
Sour cream
Freshly chopped chives
Pomegranate seeds

Directions

1. Melt margarine in the bottom of a large soup pot with lid over medium heat.

2. Add leeks and cook until translucent and softened.

3. Add broth, potatoes, and pears to the pot and bring to a boil.

4. Reduce to medium-low heat, cover, and cook for approximately 25 minutes.

5. Puree the soup using a handheld or immersion blender.

6. Stir in brown sugar and salt.

7. Ladle to serve; garnish as you wish.
