Mezze: Buttery Hummus with Za’atar and Challah

My husband and I like to have people over for Friday night Sabbath dinner – one of the few times we can relax over good food and lively conversation with the people we love. This recipe has become a Friday night staple, because this unique, flavorful version of hummus goes so well with challah. The recipe comes from Ana Sortun’s Spice cookbook, but I’ve replaced the accompanying meat and tomatoes for a vegetarian and absolutely delicious alternative – za’atar. Za’atar is a spice mix that is particularly popular among Palestinians and Israelis. It usually combines thyme, sumac, sesame seeds, and salt, as well as other spices, depending on the version. The hummus pairs perfectly with the sweetness of the challah, but could be served with almost any kind of bread. It’s also super easy to whip together – even at the end of a long work week. –jaime

Ingredients

1 15oz. can chickpeas OR 2 cups dried chickpeas, soaked overnight and cooked

6 tablespoons (3/4 stick) butter, cut into small pieces

½ cup extra virgin olive oil

1 large clove garlic, chopped

1 tablespoon freshly squeezed lemon juice {about ½ lemon}

2 teaspoons ground cumin

Salt and pepper to taste

1 tablespoon za’atar

Challah or sweet bread of your choice

Directions

1. If using dried chickpeas, follow the directions for soaking and cooking them. I’m a fan of Mark Bittman’s “Quick-Soaking” method. If using canned, just skip to #2.

2. Add chickpeas, butter, olive oil, garlic, lemon juice, 1 tablespoon hot water, cumin, salt and pepper to a food processor {metal blade}. Puree until very smooth and creamy. It may take 3 to 4 minutes.

3. Adjust seasoning – really play around with this! You may like it with more garlic, cumin, etc.

4. Place hummus in a soup bowl or other serving dish and sprinkle with the zaatar. If hummus is not already warm, heat it in the microwave for around 30 seconds or until the hummus is more golden.

5. Serve with challah or other bread.
