Light Mediterranean Meals Paired with Ample Dessert

Dolce: Maple Poached Pears

I was feeling the calendar swinging into October and decided to fully embrace fall. These Maple Poached Pears are from Terry Walters’ masterpiece of a cookbook, Clean Food: A seasonal guide to eating close to the source. I found several beautiful pears at the grocer and transformed them into this simple, light, and delicious treat. The flavors added are some of my favorites. You can experiment by swapping in other spices you might like such as cloves, cardamom, or orange zest.  —jacque

Ingredients

5 ripe pears (should still be firm)

1 cup water

1 cup maple syrup

1 teaspoon lemon extract

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 1-inch piece of gingerroot, peeled and sliced

Directions

1. In a large saucepan, combine water, syrup, and flavorings over medium heat.

2. Cut pears in half and remove cores. I prefer to leave the skin on but you can remove if you like.

3. Place pears in syrup and reduce heat to a gentle simmer.

4. Cover and cook for 20 minutes or so until pears are soft to the touch.

5. Remove from heat and cool slightly.

Pairings

1. Serve solo with espresso, coffee, or a glass of pinot noir.

2. Serve warm with a scoop of vanilla ice cream.

3. Add a drizzle of caramel to make things even more sweet.
