Brussels Sprout Salad

I am a big fan of Brussels sprouts. I love seeing them fresh in the store this time of year. My mother and I are always comparing notes on new recipes making use of these tasty tiny cabbages. As you can imagine, I was excited to see Brussels sprouts as a featured ingredient in the most recent issue of Vegetarian Times. I was most intrigued by this recipe, which makes use of steamed Brussels sprouts as a substitute for your standard leafy salad greens.

I prepared this yummy salad for a family meal during a recent visit with my parents. I used feta cheese instead of bleu as the original recipe called for. We really liked how this salad turned out, even more so on the second day once all of the flavors had a chance to merge together. It was really bright and tangy and would be a perfect start to any Mediterranean meal.–jacque

Ingredients

1/2 cup apple cider vinegar

1/4 cup sugar

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 large red onion, sliced thinly

1 pound Brussels sprouts, quartered

1 1/2 cups radicchio, coarsely chopped

2 ounces feta cheese, crumbled

1 1/2 tablespoons olive oil

Directions

1. Mix together vinegar, sugar, salt, pepper, and 1/2 cup water and soak onion slices in the mixture. Let these stand for at least 45 minutes to pickle.

2. Steam Brussels sprouts over boiling water until tender.

3. Once cool, mix Brussels sprouts in a large bowl with salt, pepper, radicchio and feta cheese.

4. Drain onions from pickling brine and add onions to the salad.

5. Toss with olive oil, mix well, and serve.
