I first fell in love with orange blossom-infused dolce with my first scoop of scented ice cream in West LA’s “Little Persia,” a strip of Iranian stores and eateries running down Westwood Blvd. “Little Persia” is filled with family ice cream shops, each serving flavors like saffron, rose water, and orange blossom, their scoops sometimes studded with pistachios or sour cherries. Until my first bite, I didn’t know you could add floral flavors to something so sweet, nor that it could taste so good! Then I moved 3,000 miles away to Boston, had Sofra Cafe’s orange blossom glazed morning bun, and was sold forever.

Since then, I’ve been trying to create my own floral dolce, and I think I’ve found a winner. This applesauce combines the sweet earthiness of apples with the fragrance of both orange blossom and cardamom. It’s a bit healthier than ice cream, but still hits the spot when I’m craving a sweet snack or dessert. I originally created it to top traditional Chanukah potato latkes (divine), but it works all year round, especially after apple picking.

And in the process of creating this recipe, I learned a secret – the trick to flavorful applesauce is to throw in some of the peel while the apples are cooking. Just make sure to puree it up well with a blender. Enjoy! –jaime

Ingredients

6 apples (Fuji and Braeburn tend to be the best for applesauce)
1 1/2 cups water
1/2 cup honey
1/3 cup orange blossom water (you can buy this very inexpensively at any Middle Eastern market)
1 1/4 teaspoons ground cardamom

Directions

1. Peel, core, and cut apples into large chunks. Reserve peel from 2 apples.

2. Put apples, reserved peel, and the rest of the ingredients in a large pot. Cook over medium-high heat until boiling.

3. Stir, cover, and reduce heat. Simmer on low for 20 minutes, or until apples are soft.

4. Use potato masher or an immersion blender to turn the apples into an applesauce. You will likely need to ladle out some extraneous liquid at the end to achieve a thick sauce.

5. Garnish with apple peel, chopped almonds, or chopped mint.
