Mezze: Ful Mudammas for Jacque’s Birthday!

Today is Jacque’s birthday!  For those of you who don’t know Jacque, you probably know that she’s the other blogger for this fun Mezze and Dolce community we’ve started.  For those of you who do know Jacque personally, you know there’s a lot to celebrate today.  She’s awesome!

When my husband and I lived in Boston, Jacque’s presence was felt at every one of our celebrations.  For my birthday, she and Tim hosted a big party in her backyard with food from our favorite Sofra Cafe.  For my graduation, she made our cake – a rich chocolate ganache with peanut butter cup “mortarboard” lollipops.  Now that I live in California, I can’t quite drop by Jacque’s house with a birthday treat.  So instead, I decided to cook this Ful Mudammas in her honor.

Ful Mudammas is a simple mash of fava beans, chickpeas, garlic, and lemon that originates from Egypt.  It is often eaten for breakfast or lunch with some warm, fluffy pita.  Why Ful Mudammas?  Well, some of you may have heard about the first time Jacque and I cooked together for a group of friends.  We bit off a little more than we could chew, and spent countless hours shelling dried fava beans in her kitchen.  We learned a lot that day, but most importantly, it’s the day we first talked about starting this blog.  And now here we are.

This ful mudammas is probably the easiest meal I’ve made for M & D – no shelling required.  So Jacque, I offer it up to you in gratitude for your friendship, for our laughs, and for being the M to my D!  Love.  –jaime

Ingredients

 15 ounce can fava beans (sometimes called broad beans), rinsed and drained

15 ounce can chickpeas, rinsed and drained

½ cup water

2 large cloves of garlic, peel on

1 small tomato, chopped

½ teaspoon salt

Juice of 1 lemon

2 tablespoons olive oil

Cayenne pepper (optional – I just used a spiced salt blend to add a little spice)

Garnish, tomato, onion, and/or parsley, chopped

Directions

1.  Bring fava beans, chickpeas, and water to a simmer in a medium-sized pot.  Simmer beans for 5 minutes.

2.  While beans are simmering, press down on garlic cloves one at a time with the side of a knife.  Press hard enough so that the peels start to come off and the clove gets a good mash.  Take off peels and chop the garlic.  Using this mashing technique allows the garlic’s juices to release before dicing.

3.  Add the salt to the garlic and dice the garlic so that the garlic and salt start to mash together.  (If you have a mortar and pestle, you can also just use that).  Add garlic-salt mixture and tomatoes to beans and cook another 5-7 minutes.

4.  Remove pot from heat and mash beans half-way – it should be about half mash and half full beans.  Stir in lemon juice and olive oil.

5.  Taste for salt, lemon, and other seasonings and adjust accordingly.  Garnish.
