Light Mediterranean Meals Paired with Ample Dessert

Mezze: Tomato Za’atar Crostini

This mezze combines some of my favorite things – salty feta cheese, tangy za’atar, and juicy tomatoes – atop crusty bread. These crostini work well as a first course or as an accompaniment to a hearty soup. Instead of leaving the feta cheese in cubes which can make these hard to eat, I like to whip the cheese in a food processor with a little olive oil to turn it into a spread. This briny, cheesy goodness becomes the backdrop for a spicy tomato salad with za’atar. To learn more about za’atar, check out one of Jaime’s previous hummus posts. Enjoy! –jacque

Ingredients

Thickly sliced rustic bread

1 cup feta cheese

1 1/2 cups cherry tomatos, quartered

2 tablespoons olive oil

2 teaspoons za’atar

Salt, to taste

Directions

1. Cut bread into thick slices and toast in oven at 350 degrees.

2. Whip the feta cheese with one tablespoon of olive oil using a food processor.

3. In a small bowl, toss tomatoes with your other tablespoon of olive oil and za’atar.

4. Once your bread is nicely toasted, top with whipped feta spread then tomatoes and serve.
