Light Mediterranean Meals Paired with Ample Dessert

Dolce: Strawberry, Pistachio & Cardamom Crumble

I know it’s a good Sunday morning when I’m scooping up warm strawberry crumble for breakfast.  It’s a pretty rare indulgence, but the truth is that much breakfast food – pancakes, waffles, french toast – is usually just dessert disguised as morning provisions, don’t you think?  I was so proud of creating this recipe that I decided to go against my healthier judgment and let the positive crumble vibes trickle  into breakfast, too.

I initially made this recipe as a birthday gift for my co-worker Burt, whose been one of our most avid readers and supporters since we started M & D.  I made it with a little cookbook coaching from Mark Bittman’s “How to Cook Everything Vegetarian,” the perfect kitchen companion for anyone trying to experiment with new flavors but looking for a little guidance.  With Bittman’s basic crumble framework, I was able to make my strawberry-pistachio dream a reality.  And a breakfast!   –jaime 

P.S.  I also used Bittman’s coaching for our hearty Create-Your-Own Minestrone, a simple soup that makes a comforting weekday meal.

Ingredients

Makes 8 servings

~Crumble~

12 tablespoons butter (1.5 sticks)

1 cup chopped unsalted pistachios (I used TJs pistachio “meats” so I can avoid shelling)

heaping 1 cup brown sugar

1.5 tablespoons lemon juice

1.5 teaspoon cardamom

1.5 cups flour

4 pinches of salt

~Strawberries~

4 pounds strawberries (halved if small, quartered if big)

heaping 2/3 cup sugar or brown sugar

3 tablespoons cornstarch

Directions

1.  Preheat oven to 400 degrees.

2.  Chop pistachios in a food processor and set aside in a small bowl.

3.  Add butter and brown sugar to food processor and process until creamed together.

4.  Add the rest of the crumble ingredients, including pistachios, and pulse until combined and gathering into large chunks.

5. Butter a 1 QT baking dish by “drawing” ‘with a stick of butter all over the dish.

6.  Add strawberries, sugar, and cornstarch to dish and stir to combine.  (Most people would advise again mixing the strawberries in the buttered dish, but I think it saves you from washing one more dish.)

7.  Spread out strawberries evenly, top with pistachio crumble, and bake for 25-30 minutes, or until crumble is golden brown.
