Light Mediterranean Meals Paired with Ample Dessert

Mezze: Kale-Kale Salad

That’s not a typo you see in the title. This salad is called “kale-kale” as it includes kale in two ways – raw and roasted. It’s fairly easy to assemble, you just need to spend a little time washing and prepping the kale. I like to serve the salad with carrots and caramelized onions, you can throw in other veggies to your liking. I prefer my salads with minimalist dressing so that the vegetables are front and center. I toss the kale-kale creation with a little sesame oil and pomegranate molasses, similar to the vinaigrette in last week’s Spring Salad, and call it ready to serve.

Ingredients

2 bunches of kale

1 medium-sized yellow onion

3 carrots, peeled and julienned

1/2 cup olive oil

1/3 cup sesame oil

1/3 cup pomegranate molasses

Salt & pepper

Directions

1. Preheat oven at 400 degrees Fahrenheit.

2. Wash and prep kale, removing the thick ribs at the center of the leaves. Tear into bit-sized pieces.

3. Fill your salad bowl with half of the kale and set aside.

4. Line a baking sheet with parchment paper. Spread the remaining kale onto the baking sheet, drizzle with olive oil, and add salt & pepper. Bake in the oven for 15-20 minutes, until the leaves crisp up {but not too crispy, you’re not making kale dust!}.

5. While the kale is crisping, slice the onion. Cook over medium heat in a saute pan with olive oil, until the onions become translucent and caramelized.

6. Toss onions and carrots into salad bowl with kale and mix. Coat the salad mixture in sesame oil and pomegranate molasses.

7. Once baked kale has cooled, add it to the salad as well. Voila!
