Dolce: Lemon Chamomile Baked Pears with Almond Crumble

Every year, I pack up the car and visit one of my favorite places – Big Sur, CA. The tradition started off with my mom, who transformed my lonely first birthday in California into a magical adventure down this beautiful strip of coastline. In subsequent years, we went camping on a secluded patch of cliff and were welcomed as house guests by a generous local homeowner. The tradition has continued with my husband, with whom I spend almost every anniversary cuddled up in a rustic cabin, hiking in the morning, and pigging out at night. This recipe was inspired by one of our favorite pig out spots – Big Sur Bakery and Restaurant.

The Bakery is an intimate and warm little place, perfect for when the night time chill settles in. On our last visit there, we rounded off our burrata salad and wood-fired pizzas with a refreshing but decadent plate of chamomile poached pears paired with chamomile ice cream. This recipe is an attempt to create a lighter, more weekday friendly version – one that can be made more indulgent if served a la mode (extra points if you figure out how to make a good chamomile ice cream!). If you like dessert pears, you might also want to try Jacque’s maple version, too. –jaime

P.S. By the way, that generous local homeowner had a pet parrot named “Dino” who used to sit on his shoulder while we dined at the Bakery. I will forever associate this place with that chatty little parrot.
