Light Mediterranean Meals Paired with Ample Dessert

Dolce: Peach Cookies

It’s not quite peach season yet in New England, but I couldn’t help heralding the days of warmer weather ahead with these ‘fresh’ peach cookies. This recipe comes from none other than Martha Stewart, a woman of many talents who I routinely turn to specifically about cookies. She knows her stuff.

These cookies reminded me of snickerdoodles, a childhood favorite, with the added bonus of peach. They were light and soft, nicely served alongside tea. I made the cookies with canned peaches instead of those just off the tree (don’t tell Martha!). They were quite delicious, though I will make them again once the real deals show up in this summer’s farmers’ markets. –jacque

Ingredients

2 cups flour

3/4 teaspoon salt

1/2 teaspoon baking soda

1 stick butter, unsalted

1 cup granulated sugar

1 egg

1/2 teaspoon vanilla extract

1 10 oz. jar of canned peaches, strained and diced

1 tablespoon sugar

1/8 teaspoon cinnamon

Directions

1. Preheat oven to 375 and line a baking sheet with parchment paper.

2. Whisk together flour, baking soda, and salt.

3. Cream together sugar and butter using a hand mixer at medium speed.

4. Reduce mixer to lowest speed and mix in egg and vanilla.

5. Add flour mixture and mix until combined.

6. Toss in peaches and mix throughout.

7. Scoop cookie dough into small balls or ‘drops’ using an ice scream scoop or tablespoon. Leave about two inches between each cookie on the baking sheet.

8. Mix together additional sugar and cinnamon. Sprinkle this onto the tops of the cookies before placing into oven.

9. Bake for 11-13 minutes. Transfer to cooling rack and allow to rest for 5 minutes or so.
