Mezze: Asparagus Mint Slaw

Asparagus Slaw

Continuing the celebration of asparagus that we started this spring with Mother’s Day, I came across this recipe for asparagus mint slaw from Saveur magazine. Following Saveur’s daily posts on Facebook ensures a steady stream of mouthwatering recipe ideas. This slaw is no exception.

I am a big fan of coleslaw but I do not love mayo. I’m always looking for alternative slaws that can be swapped in place of this bbq favorite. This asparagus mint slaw was fun to make {what can I say, I like the challenge of a good julienne} and will be the new slaw on my picnic table this spring. I adapted the recipe ever so slightly, adding an extra clove of garlic, a switch that neither Jaime nor I are shy about! –jacque

Ingredients

¼ cup mint, chopped

2 tablespoons olive oil

2 tablespoons red wine vinegar

2 cloves garlic, minced

5 radishes, julienned

4 scallions, thinly sliced

2 carrots, julienned

1 bunch asparagus, shaved

Salt and pepper, to taste

Instructions

1. Whisk together mint, olive oil, vinegar, garlic, salt and pepper in a small bowl.

2. Julienne radishes and carrots and chop scallions.

3. Trim and shave asparagus into long, thin strips.

4. Mix together the vegetables and dress with oil/vinegar mixture.
