Introducing M & D’s Inspiring Ingredient of the Month: Pistachio!

We throw around a lot of fun, new flavors here at M & D – orange blossom water, pomegranate molasses, nigella seeds. Even old staples like lemon and chickpea take on new form, challenging ourselves and our readers to experiment in ways you’ve never done before. So when we read the results of our recent survey, they confirmed our intuition – it’s time to tackle each one of these ingredients head on!

On the first Tuesday of every month, we’ll share an “Inspiring Ingredient” post, similar to the one below. We’ll pick an ingredient and highlight its uses, share a reel of M & D recipes for your experimentation, and mention a few others that might make it into our kitchens sometime soon. We’ll also ask you to share some your favorite recipes featuring the ingredient, as well as anything you make with the featured flavor during the month!

So Pistachio…

In the M & D world, pistachios don’t just exist for addictive snacking. The popular Middle Eastern nut is one of those uniquely versatile ingredients that fits comfortably in both the mezze and dolce categories of yum. You can use them to fatten up a pesto or cruda, to add a crunchy nuttiness to a sweet crumble or meringue, or as a sprinkled topping on a gorgeous dip. Pistachio’s bright green hue adds a splash of color to ice creams and soups, transforming a visually basic dish into a gloriously enticing meal. Its mild flavor profile makes it an easy ingredient for experimentation – swap them in for another nut in a sweet recipe, sprinkle them chopped onto a salad or roasted vegetables, or toss them with some hearty grains and herbs.

Buying and storing: You can find pistachios at almost any grocery store in the US. We both keep a bag of Trader Joe’s unsalted pistachio “Nutmeats” on hand to avoid unnecessary shelling. We recommend storing all of your nuts in the freezer, which prevents them from going rancid before you use them up.

It was divine. For a lighter meal, try the Carrot Soup with Toasted Pistachios, Asparagus Mint Slaw, and Lemon Pistachio Cookies.
