Mezze: Green Quinoa Salad

Green Quinoa

Inspired by a recent post by our friends at The Kitchn, I adapted their recipe for quinoa salad with grilled haloumi during a visit with my parents in Pennsylvania. Much to my chagrin, I couldn’t track down haloumi cheese in my parents’ neck of the woods {I’ve since found it!} so I substituted Armenian string cheese. This salad is full of green – arugula, scallions, parsley, mint, cucumbers – and, as a result, full of fresh flavor. It was perfect as a meal all on its own, and would definitely work as a side dish. When I make this dressing again, I think I’ll add another clove of garlic or two!  –jacque

Ingredients

 -Dressing- 
2 teaspoons red wine vinegar
1 clove garlic, minced
1/2 teaspoon sugar
1/8 teaspoon crushed red pepper flakes
Salt & pepper, to taste
2 tablespoons olive oil

 -Salad-
4 Persian cucumbers, diced
2 scallions, chopped
1/2 cup quinoa, cooked
1/2 cup flat-leaf parsley
1/2 cup mint
1 lemon
3 cups arugula
8 ounces Armenian string cheese

Directions

1. Wash and cook quinoa and allow to cool. I find that it’s important to follow the guidance on the package, depending on the type of quinoa you’re using.

2. In a small bowl, prepare the dressing by mashing garlic with red wine vinegar and spices. Add olive oil and stir. Set aside until you’re ready to dress the salad.

3. Once the quinoa is cooled, mix in cucumbers, scallions, parsley and mint.

4. Squeeze lemon juice onto salad along with dressing  and mix thoroughly.

5. Serve salad on a bed of arugula, with cheese served alongside.
