Mezze: Cucumber Poppy Salad

Jaime and I are counting the days to a few special events coming this fall – one of which is the US release of Ottolenghi’s first cookbook, eponymously Ottolenghi. I took a sneak peek inside the book recently and came across this beautiful recipe for cucumber salad with poppy seeds. It’s seriously divine, almost like a quick pickle with an added touch of heat from the chili. I altered the recipe slightly by adding in coriander seeds instead of leaves. I have a hearty helping of coriander seeds in my pantry at the moment and I’m looking for new ways to use them {ideas, please!}. I enjoyed this salad freshly made, as well as packed in lunch the following day. I can’t wait to see what other delicacies this book holds in store! –jacque

Ingredients

6 Persian cucumbers, sliced on the bias

2 red chilis, seeds removed and thinly sliced

2 tablespoons coriander seeds

2 tablespoons poppy seeds

1/2 cup rice vinegar

1/4 cup sunflower oil

1 tablespoon sugar

salt and pepper

Directions

1. Slice cucumbers, thinly on the bias. Ottolenghi recommends removing the center, seeded part of the cucumber. I leave those in and reduce the amount of liquids going into the salad.

2. Mix cucumbers with red chilis, coriander seeds, and poppy seeds.

3. Toss with rice vinegar and sunflower oil.

4. Add sugar and mix throughout.

5. Salt and pepper to taste.

6. Serve immediately or refrigerate for up to 12 hours before serving.
