Mezze: Dandelion Greens with Beets and Pistachios

Today’s mezze features a bittersweet salad with the complimentary pairing of bitter dandelion greens and sweet beets. Dandelion greens are incredibly bitter and are best served cooked and balanced out with a hint of sweetness. In this recipe, beets do the trick, along with assistance from two of our inspiring ingredients, sumac and pistachio. This salad, which may be eaten hot or cold, pairs nicely with crostini. Try it with our Pesto White Bean Spread, Artichokes, and Arugula or with Tomato, Za’atar, and Feta.

This salad is bittersweet for another, more personal reason as well. My grandmother, who introduced me to the wonder of dandelion greens and to cooking in general, passed away earlier this summer. She lived a good life, filled any room with her warm spirit, and was an amazing home cook. A little bit of her charm, culinary traditions, and Italian heritage live on through this blog. Ingredients

4 medium-sized beets

1 bunch dandelion greens

1/2 cup olive oil

1 teaspoon sumac

1 cup pistachios

Salt, to taste

Directions

1. Start this recipe by washing and peeling the beets. Boil in water in a medium saucepan until beets are tender. This can take around 20-25 minutes at a steady rolling boil the whole time.

2. While your beets are softening up, wash the dandelion greens and trim off the stems.

3. In a saute pan on your stovetop, heat the olive oil over a medium flame. Add the greens and sauté until wilted and cooked.

4. Once your beets have cooled a bit, slice them and mix with the greens {I prefer skinny round slices, but you could dice the beets as well; whatever you like!}.

5. Sprinkle the greens and beets with sumac and mix so that the spice incorporates throughout.

6. Salt to taste.

7. Just before serving, top with pistachios {make sure you add them just before serving; otherwise, the heat will make the pistachios mushy and vanquish their crunch!}.
