Mezze: Kale Pomegranate Salad with Glazed Pecans

Today we’re featuring a crunchy salad adapted from the latest issue of Vegetarian Times – kale salad paired with bursts of pomegranate seeds and tossed with a pomegranate molasses vinaigrette. The salad is delicious and filling, and the nuts and cheese make it a hearty, protein-rich meal. I swapped in cheddar instead of gouda as the original recipe called for – both for taste and to keep the salad a little on the healthier side. –jacque

Ingredients

{Glazed Pecans}

1/2 cup pecan pieces

1 tablespoon pomegranate molasses

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon Aleppo pepper

{Vinaigrette}

2 tablespoons pomegranate molasses

2 tablespoons olive oil

1 small shallot, finely minced

{Salad}

1 bunch Tuscan kale {also called lacinto or dinosaur}

1 medium-sized apple, thinly sliced

1/2 cup pomegranate seeds

1/3 cup light cheddar cheese, thinly sliced

Directions

1. Make the glazed pecans first. Start by heating oven to 350 degrees Farenheit.

2. Combine pecans, pomegranate molasses, olive oil, salt and pepper in a small mixing bowl.

3. Place coated pecans on a baking sheet lined with parchment paper and bake for 10-12 minutes. Set a timer and keep a close watch. Let pecans cool to room temperature.

4. Make vinaigrette next by combining pomegranate molasses, olive oil and minced shallot. Whisk until well incorporated and set aside.

5. Cleaning the kale can be a bit of an undertaking. I like to “devein” it by cutting out the thick ribbing in the center of each leaf. Cut kale into 1/2 inch strips and wash.

6. Once kale is prepped, place in a large mixing bowl and dress with vinaigrette. Mix it so that it is coated with the dressing.

7. Add in apple, cheese, pomegranate seeds, and pecans and serve.
