Light Mediterranean Meals Paired with Ample Dessert

Dolce: Banana Granita

If you are anything like I am, you occasionally have a banana or two too many on hand. I try to always shop for just the right amount, but inevitably, tastebuds change from week to week and I often have a few extra that I can’t manage to eat before they are passed their prime. Not one to waste food, I always have an eye out for things to do with these perfectly delicious yet too mushy bananas. The banana must not fall too far from the tree as my mother usually has a bunch of overripe bananas on her counter too. Her solution is to make banana bread, which is really yummy, but not something I can bake all of the time or eat every day.

So, what’s a gal to do with too many bananas? Blend them up, my friends, and stick them in your freezer! This is the best trick I’ve learned so far. The blended bananas freeze up nicely into a smooth, creamy frozen granita of sorts, without any added ingredients. I topped mine with pecans and chocolate which was so delicious I was almost able to trick myself into thinking this was ice cream. In my book, this is better – naturally creamy, healthy with no added sugar or dairy, and I no longer have sad, brown bananas on my counter! –jacque

Ingredients

As many overripe bananas as you have on hand

Directions

1. Peel the bananas.

2. Blend the bananas in a food processor or blender.

3. Pour into a glass container with a lid that will be able to withstand the cold temp of your freezer.

4. Allow the bananas to freeze until set; usually overnight.

5. Top as you wish and enjoy!
