Dolce: Apple Cardamom Hand Pies

apple_hand_pies_five_bakedIf you are looking for a dolce that combines everything wonderful about fall and pie and packs them into something, small, and deliciously handheld, look no further. You have to make hand pies! A crispy, flaky dough full of gooey apple goodness? Really, how could you ask for more.

This recipe is an adaptation of the Faux Martha’s apple hand pies {what gorgeous photos, right?}. I altered the dough recipe a little and added in this month’s inspiring ingredient, cardamom, as well as a little sprinkle of crystallized sugar on top. I made these for a weekend potluck dinner with friends. I knew they were a hit when people started going back for seconds!

In general, hand pies remind me of the little TastyCake pies my father would pack in his lunch when I was a kid. I remember not being able to comprehend how a pie fit into such a tiny box; now I get it. And this homemade version is way better than anything I remember. I think the recipe would work well with any pie filling. What kind should we test out next? –-jacque

Ingredients

{Pie Dough}

2 1/2 cups all-purpose flour

2 tablespoons sugar

1 teaspoon sea salt

2 sticks unsalted butter, very cold

1 cup water, also very cold

{Pie Filling}

2 Granny Smith apples

2 McIntosh apples

2 teaspoons lemon juice

1/4 cup sugar

1 teaspoons all-purpose flour

1/8 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon cardamom

1/8 teaspoon nutmeg

1/8 teaspoon ginger, powdered

{Topping}

1 egg

1 tablespoon crystallized sugar {I had one naturally sweetened with raspberry on hand}

Directions

1. Start with making your pie dough. Mix together flour, sugar, and salt in bowl.

2. Cut butter into small cubes and add to flour mixture. “Cut” the butter into the flour until it is blended. You can use a pastry knife if you have one. I can never find mine, so I use two butter knives.

3. Add cold water 1 tablespoon at a time to the dough. Continue mixing until the dough comes together into a well-blended mixture.

4. Wrap dough in plastic wrap and refrigerate for at least 30 minutes.

5. While your dough is chilling out, start to work on the pie filling. Core and dice the apples. I like to leave the peels on.

6.  Add the lemon juice, sugar, flour, and spices to the apples. Stir and set aside.

7. Preheat oven to 375 degrees Fahrenheit and line baking sheets with parchment paper.

8. Now that dough is chilled, flour a countertop or other flat surface. Roll out the dough. Use a biscuit cutter or round cookie cutter to create 16-18 circles. Each circle will become an individual hand pie.

9. For each pie, add a small amount of apple mixture to the center of the circle {around a tablespoon and a half}. Fold dough over the mixture into a half moon shape. Press the edges to seal. I twisted the dough along the edge, both for aesthetics and an extra-secure seal.

10. Cut an “x” into the top of the half moon to let steam release during baking.

11. Paint hand pie with egg wash and sprinkle with sugar topping.

12. Bake for 25 minutes or so, until the dough is golden brown.

13. Allow to cool before serving. Enjoy!
