Inspiring Ingredient: Pine Nuts

This month, we are cooking with pine nuts. Have you ever had them? Pine nuts are the edible seeds from trees in the pine family. There are lots of different varieties, harvested from different types of pine trees in Asia, Europe, Italy, and even by Native American tribes in the US. Pine nuts have been consumed by people for centuries, adding their signature nutty flavor to dishes, along with a bit of protein and B1. Pine nuts complement recipes that are both sweet and savory and are a key ingredient in real Italian pesto.

A word of caution before you consume though. Pine nuts have been noted to cause “taste disturbances” in some cases, making things taste metallic for days or weeks after eating. Eek! This is thought to be caused by pine nuts that are past their prime. Make sure the pine nuts you use are as fresh as possible.

Buying and Storing
Pine nuts are sold in most grocery stores. We recommend splurging on a higher end product. Some things are worth it and pine nuts are in that category. You should also confirm the date they were packed to make sure what you are buying is fresh. To keep the pine nuts from going rancid, store in an air-tight container in your refrigerator. They will keep for six-eight weeks.
