Dolce: Melting Pot Hot Chocolate

Winter is here. The chill has settled in, bringing out our mittens and puff jackets and ceramic mugs. I’ve been dressing my newborn daughter in full-body pink furry outfits, covering her until she’s practically sweating on our windy walks. Even here in Oakland you can imagine the possibility of a snowy Christmas. It’s COLD, and I know I’ve got nothing on Jacque’s frigid Boston weather.

We at M & D decided that this Christmas called for the best kind of warmth – hot chocolate. Call us cliche, but we’re not talking about Swiss Miss and freeze-dried marshmallows. For M & D Hot Chocolate Week, we’re sharing recipes that blend bold Mediterranean flavors with rich bars of cocoa to create smooth, full-bodied comfort. Hell, some of these recipes might even make you feel like you’re spending Christmas in the warm Mediterranean sun.

Today’s “Melting Pot” Hot Chocolate blends spices that represent the breadth of the region – Spanish saffron, Iranian rosewater, Turkish chili. I adapted a Saveur recipe to better suit the everyday cook – replacing dry, whole spices with liquid ingredients to avoid the pain of sieving. Who wants to waste precious family time picking out dried rosebuds and pricey vanilla beans? And don’t let these special ingredients fool you – this hot chocolate has the ease of a simple one-pot meal, perfect for filling the mugs of your loved ones on Christmas eve. –jaime

Special M & D low-brow tip: Got leftover Hershey miniatures from Halloween? This hot cocoa is the perfect way to use up the holiday remains. Believe me – your family won’t think it tastes any less fancy.

Ingredients

4 cups milk

1 teaspoon rosewater

1/2 teaspoon saffron, lightly crushed

1 1/2 sticks of cinnamon

3/4 teaspoon urfa chili (or another preferred chili like cayenne)

1 1/2 teaspoons vanilla extract

1/4 cup sugar

4 ounces bittersweet chocolate, coarsely chopped

Directions

1. Combine all of the ingredients EXCEPT for the chocolate in a medium saucepan over medium-high heat.

2. Bring milk mixture to a boil, then lower the heat and cook for 10 minutes, ensuring that all ingredients (except for the cinnamon stick) have dissolved.  Remove from the heat and cool for 10 minutes. Remove the cinnamon stick.

3. Put the pan back on medium heat and add the chocolate. Whisk for 5 minutes or until the chocolate is fully melted and incorporated. Serve.
