Dolce: Passionfruit Thumbprint Cookies

This December, I had the pleasure of attending the Eat Boutique Holiday Market. It was a big gathering of the best and tastiest handcrafted food and libations, made in small batches across the US. There were punchy mustards, cheeky hard ciders, chocolates, cookies, sauces, spices, etc. But there was one thing we tasted early in our tour that really knocked our socks off – Rare Bird Preserves Passionfruit Curd. Maybe it was the taste of the tropics fending off a bitter cold day, maybe it was the memories of time spent on sandy beaches, or maybe it was just that darn good. Rare Bird makes all sorts of delectable jams and preserves, but the passionfruit curd was the real stand out. Seriously, this stuff is aces. I bought some for my pantry and started scheming immediately.

I developed this cookie recipe, a tweak on a traditional jam thumbprint,  in order to create a flaky backdrop for this star product. The cookies were a hit, and I only used half of the jar. Now…what to do with the rest? –jacque

Ingredients

1 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter (1 1/2 sticks)

2/3 cup sugar

1 egg

1 teaspoon vanilla extract

Passionfruit Curd

Directions

1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.

2. Mix the flour, baking powder, and salt together.

3. In a separate bowl, mix together the butter and sugar with a hand-held mixer. Once these ingredients are well-incorporated, add in the egg and vanilla and mix again.

4. Continue mixing, adding the dry ingredients to the batter in small batches.

5. Use a spoon or ice cream scoop to make 1-inch balls of cookie dough. Arrange the cookie balls on the baking sheet. Flatten each ball with the palm of your hand.

6. Make an indentation in each cookie using your thumb {hence, the name!} or the back of a spoon. Fill each center with a 1/4 teaspoon of passionfruit curd.

7. Bake until the cookies are browning along the edges. Move to a rack to allow to cool. It takes the curd a little longer to cool than the cookie. Be patient so you don’t burn your tongue on the “tester” cookie!
