Light Mediterranean Meals Paired with Ample Dessert

Inspiration: Dahlia Bakery | Seattle, WA

I had the pleasure of taking my first trip to Seattle, WA recently for work and had to make time to scope out the local food scene, of course. While researching and polling friends before my travels, one place that was on every local list was Dahlia Bakery. Given its special name and all of the hype about its cookies and pies, I took an early morning stroll to Dahlia Bakery to get inspired by their creations.

Run by Tom Douglas, star of the Seattle food scene, Dahlia Bakery was such a fun, cozy, inviting spot. The store itself is a little small, but don’t let that deter you. Its shelves are packed with treats. It was early in the day, so I ordered one of their egg sandwiches and a coffee. The egg sandwich was piled high with greens and wild mushrooms. It was crispy and gooey in all the right ways and left me feeling inspired to cook more with mushrooms. Despite it being breakfast, I could not leave the bakery without a few sweet things to savor later in the day.

Dahlia Bakery has two famous dolces on its menu: the triple coconut pie and the peanut butter cookie. If you love coconut {like I do!}, this pie is for you. It features shredded coconut and coconut milk in the cream, coconut in the crust, and is topped with toasted coconut. The coconut pie comes in three sizes: mini, mid, and standard. I picked up a mini just to try a bite and wished I had opted for the larger size because it was divine. The peanut butter cookie was out-of-this-world delicious featuring two perfectly crunchy cookies with a smooth peanut buttery center. I am salivating just writing about this cookie. These cookies are famous in their own right and were made even more so by the late director Nora Ephron. Here is a sweet little story about her first experience at Dahlia Bakery and what the peanut butter cookie inspired her to do.

So, if you ever find yourself in Seattle, make sure Dahlia Bakery is on your list. While you’re at it, stop by the new museum recently opened by the Gates Foundation, which is also sure to leave you inspired. –jacque
