Mezze: Quick & Elegant Citrus Salad

As 2014 approached, Jacque and I decided to add a little M & D flare to our New Year’s resolutions – we set a culinary goal or intention, something that would guide how we cooked and ate in the coming year. Mine was plain and simple – fill in a gaping hole in my diet with hearty, leafy greens. I’ve already shared a recipe that represents my resolution – this Roasted Cauliflower and Kale Soup with Dukkah. The kale pairs beautifully with creamy cauliflower and earthy dukkah, giving this sturdy green another use besides the base of a salad. This Quick & Elegant Citrus Salad recipe is my answer to Jacque’s resolution – to host more dinners with friends.

This salad made its way into our repertoire when we were living in Boston a couple of years ago. Tim and I were regularly hosting Friday night dinner, and we needed a no-fuss salad that paired easily with whatever happened to be on the stove that evening. Easy sides like this salad, with its vibrant colors, crunchy vegetables, and bright citrus punch have been the secret to our regular meals with friends. With little effort, we’re able to put out a spread that satisfies and fills bellies, so that we can focus on the more important part – spending time with the people we love. –jaime

P.S. Our other hosting staple is this Buttery Hummus with Za’atar – a smooth, decadent pairing to any bread!

Serves 6

Ingredients

5 ounces mixed salad greens (I prefer the kind with herbs mixed in)

2 Lebanese or Persian cucumbers

6 radishes (I prefer the subtle flavor and small shape of breakfast radishes, but any radish works)

3 small or 2 medium blood orange or cara cara oranges

4 tablespoons sliced almonds

Champagne Vinaigrette (you can make your own with this recipe or buy your favorite bottled variety)

Directions

1. Place mixed greens in a large bowl.

2. Cut cucumber in half lengthwise. Then slice the cucumber halves horizontally so that they form half-moons. Place them in the bowl.

3. Thinly slice the radishes and place them in the bowl.

4. Carefully slice away the peel from the orange so that there is no pith remaining on the outside, cutting away as little of the orange as possible. Cut the orange in half lengthwise. Like with the cucumbers, slice the orange halves horizontally. If the pieces are large, but them into quarters instead of halves. Place in the bowl.

5. Sprinkle with almonds. Serve tossed with your desired amount of champagne vinaigrette, or serve the dressing on the side. Now enjoy your company!
