Dolce: Chocolate Chunk Cookies with Chestnut Creme

One of the many perks of having a food blog is that your friends and co-workers share their culinary adventures with you. Sometimes, if you are lucky, they even introduce you to exciting new ingredients. This happened to me recently when a friend brought chestnut creme from Paris to my little kitchen. I love chestnuts and have many fond memories of roasting them in the fireplace with my grandfather during Christmas gatherings. I think of them as a special, one-a-year treat, so you can imagine how excited I was to try out this product. I was so excited to see chestnut in a different form that I, admittedly and embarrassingly, though it was hand lotion. I kid you not. I opened the tube and was about to smear it on my hands when I looked closely at the sugary texture. And then realized there were nutrition facts on the back of the packaging. Doh! I swear it was an easy mistake, just look at the tube {see below}.

Realizing it was something we could eat, I wanted to get down to using the chestnut creme. I adapted the same basic cookie recipe that I used in the Passionfruit Thumbprint Cookies we recently featured. I added chocolate chunks to complement the chestnut flavor, which really elevated the decadence quotient of the cookie. C’est magnifique! –jacque

Ingredients

1 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter (1 1/2 sticks)

2/3 cup sugar

1 egg

1 teaspoon vanilla extract

4 ounces of dark chocolate, chopped into chunks

Chestnut creme

Directions

1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.

2. Mix the flour, baking powder, and salt together.

3. In a separate bowl, mix together the butter and sugar with a hand-held mixer. Once these ingredients are well-incorporated, add in the egg and vanilla and mix again.

4. Continue mixing, adding the dry ingredients to the batter in small batches. Finally, add in the chocolate chunks.

5. Use a spoon or ice cream scoop to make 1-inch balls of cookie dough. Arrange the cookie balls on the baking sheet. Flatten each ball with the palm of your hand.

6. Make an indentation in each cookie using your thumb or the back of a spoon. Fill each center with a dollop of chestnut creme.

7. Bake until the cookies are browning along the edges. Move to a rack to allow to cool.
