Mezze: Kale Crostini

Today, we’re bringing you a simple mezze that was originally posted by our blog friends at Food52kale crostini. These crostini are easy to make and very satisfying. Their simplicity underscores how delicious kale is, especially tossed with garlic, lemon, and the right amount of olive oil {more = better}. Tuscan or dinosaur kale works best for this recipe, so steer clear of the curly stuff.

These crostini are a perfect mezze for a dinner party. Prep the ingredients ahead of time and toast the bread just as your guests are arriving so that you can serve them while they are crispy and warm. —jacque

Serves 6

Ingredients

1 bunch of kale {Tuscan or dinosaur}

1 baguette of French or Italian country bread, slide into small rounds

2 cloves garlic, sliced thinly

2 tablespoons olive oil, plus some more!

1 lemon, freshly squeezed

Sea salt and ground pepper, to taste

Directions

1. Wash and prep the kale. I like to remove the stalk in the middle and tear it into bite-sized pieces.

2. Blanch the kale in hot, salted water. I only flash boil it quickly in order to allow the leaves to cook but keeping them perky. Run the kale under cold water when you remove from the stove to stop the cooking process. Drain and pat dry to remove excess water.

3. Saute garlic with olive oil, until the garlic is just slightly browned. Toss the mixture into the kale, along with the lemon juice and mix. Set aside.

4. Brush the bread slices with olive oil and toast. I used my high-powered toaster oven but you could easily toast in the oven or grill.

5. Top each toasted bread with a heaping spoonful of kale. Drizzle a little extra olive oil and top with salt and pepper to taste.
