Dolce: Blueberry Nutmeg Cake

Today’s post features the perfect cake to make for this Mother’s Day weekend. Whether you are hosting a brunch or want to make something sweet for a special lady in your life, this blueberry nutmeg cake is delicious. It’s not too sweet, the blueberries turn almost jam-like, and it has a little spicy nutmeg surprise.

The recipe for this cake comes from Ripe, a gorgeous book that Jaime and her family gave to me. The book, written by Cheryl Sternman Rule with photography by Paulette Phlipot, features simple recipes using fruits and vegetables, organized by color and beautifully photographed.

I dedicate this cake to my lovely and amazing mother, to my superstar co-blogger Jaime, and to all of my other friends celebrating their first official mother’s day as new moms. I am in awe of you all! –jacque

This cake serves eight or one hungry mother {no judging!}

Ingredients

2 cups blueberries

3/4 teaspoon lemon juice, freshly squeezed

3/4 cup sugar, plus 2 1/2 tablespoons

1 cup flour

3/4 teaspoon nutmeg

1/4 teaspoon kosher salt

1 stuck unsalted butter

2 eggs

Directions

1. Take butter out of fridge and allow to warm to room temperature.

2. Preheat oven to 350 degrees.

3. Grease a nine-inch pan; line with parchment if you wish.

4. Toss blueberries with one tablespoon of sugar and lemon juice.

5. In a separate bowl, mix together flour, baking powder, nutmeg, and salt.

6. Use an electric mixer to cream together butter and 3/4 cup of sugar.

7. Add eggs, one at a time, and mix into sugar/butter mixture.

8. Add dry ingredients into creamy mixture, mix thoroughly but not too much.

9. Pour batter into pan and toss blueberries on top.

10. Sprinkle the remaining tablespoon of sugar on top, along with more nutmeg if you’d like.

11. Bake until cooked throughout, about 50-60 minutes.

12. Cool completely and serve.
