Mezze: Za’atar Buttermilk Biscuits with Honey Butter

It’s not every day that you find buttermilk biscuits on a Mediterranean food blog. But if it were up to me, I’d find buttermilk biscuits everywhere. Every menu. Every brunch. Every barbecue. Every family meal. Everywhere.

And that’s exactly where I found the inspiration to make these: At the Tripel, where they layer flavor in their miniature Spicy Coconut and Red Curry Biscuits with Orange Blossom Honey and Clotted Cream. At Sweet Cheeks Q, a Boston BBQ joint (run by a former Top Chef contestant) that serves up big fluffy Southern-style biscuits with a side of honey butter big enough for proper dousing. And, embarrassingly, at good ol’ KFC, a place I completely avoid until I get an urgent hankering for biscuits that I just can’t shake.

Needless to say, I’ve been dreaming up these biscuits for a while. They are a cross between Lebanese Manakeesh, a flatbread smothered in za’atar and olive oil, and Sweet Cheeks’ biscuit and honey butter combo. And don’t worry – I’ve included tips from Bon Apetit magazine for achieving true biscuit-y fluff. –jaime

Ingredients

Makes around 12 biscuits

~Za’atar Buttermilk Biscuits~

3 teaspoons baking powder

2 1/2 teaspoons salt

1 teaspoon sugar

1/4 teaspoon baking soda

5 1/2 cups all-purpose flour, plus more for rolling

1/4 cup za’atar, plus more for sprinkling

3 sticks chilled unsalted butter, cut into pieces

1 1/2 cups chilled buttermilk

1 large egg, beaten to blend

~Honey Butter~

3/4 c. unsalted butter (1 1/2 sticks)

1/4 cup honey

Dash of salt

1 teaspoon orange blossom water (optional)

Directions

1. Preheat oven to 375 degrees.

2. Place first 6 ingredients (baking powder through za’atar) in a large bowl. Stir until thoroughly blended.

3. Pour half of the dry mixture into the bowl of a food processor. Add half of the chilled butter pieces in and pulse the processor until it has the texture of a coarse meal with a few small pieces of butter remaining. Pour into a separate bowl.

4. Repeat #3 with the remaining dry mixture and butter, then add it to the bowl with the rest of the coarse meal.

5. Slowly mix in buttermilk with a fork. Knead gently until a loose dough comes together. Don’t work it too much so that the butter melts – little chunks of butter melt in the oven and leave fluffy air pockets.

6. Lay dough onto a lightly floured surface and pat until 1 1/4 inch thick (do not roll). Cut out biscuits with a 3 inch biscuit cutter, rerolling scraps once.

7. Place biscuits on a parchment lined baking sheet and brush tops with egg. Bake until golden brown, 30-35 minutes.

8. While biscuits are baking, place all honey butter ingredients in a food processor and pulse until combined.
