Dolce: Ice Cream Cake!

Summer-summer-summertime! There’s nothing more fitting than an ice cream cake to share as we move into a lovely summer weekend. Ice cream cakes are incredibly easy to assemble. All you need is a springform pan and some patience, along with your favorite ice cream flavors and toppings. I made this vanilla-chocolate-cherry goodness for friends this summer – there was a creamy, dairy version and a vegan, dairy-free alternative.

What would you layer up in your ideal ice cream cake? –jacque

Ingredients

1 pint vanilla bean ice cream

1 pint chocolate ice cream

1 cup cherries, pits removed and sliced in half

1 box chocolate sandwich cookies (think oreos)

Directions

1. Prep your springform pan by coating the bottom in the first layer of ice cream. It helps to let the ice cream soften a bit before spreading out an even layer. I suggest making 1 – 1 1/2 inch layers.

2.Top with a sprinkling of cookie crumbles and place in freezer for the first layer to harden. This takes at least an hour.

3. Once bottom layer is firm, spread the next layer of ice cream on top.

4. Add cherries and more cookie crumbles on top. Freeze until firm.

5. Keep going with this layering technique until you’ve reached your desired cake height and flavor/topping layering.

6. Keep in freezer until ready to serve. I suggest letting your cake sit at room temperature for 10 minutes or so before cutting.

    Hi Jaime A variation of this has been our favorite for years. We make a first layer of undercooked brownies. We especially like toasted nuts and unsweetened cocoa between the layers and, of course, mini-marshmallows. Helen
