Tzatziki is a Mediterranean staple. You might be more familiar with the version made with cucumbers. This tzatziki is made with roasted beets instead and is delicious. I first tasted this delightful dip at Sofra, a Boston-cased bakery & cafe that ranks high on the M&D inspiration list.
Beet tzatziki is a welcome addition to any mezze platter. Just don’t ask me to say tzatziki three times quickly since I can barely say it once! –jacque
Ingredients
1 pound roasted beets, grated*
3 garlic cloves, minced
2 teaspoons fresh lemon juice
2 cups Greek yogurt {I use nonfat; but any type works}
2 tablespoons fresh dill, finely chopped
Salt and pepper, to taste
Directions
1. Grate roasted beets {medium-sized grate is best}.
2. Add garlic, lemon juice, and yogurt. Mix until well incorporated.
3. Add fresh dill, salt, and pepper to finish.
*If you don’t have time to roast the beets yourself, using the pre-packaged steamed beets sold by Trader Joe’s can be a helpful timesaver.
